Tuna-Less Salad Nicoise

Ingredients

Salad

Romaine lettuce
Cucumber slices
Tomato wedges
Kidney Beans
Roasted potato wedges
Green beans

Vinaigrette

Extra Virgin Olive oil
Fresh lemon juice
Dried sage garden
Dried green onions
Dijon mustard
Raw honey (melted)
Salt & pepper

Method

  1. Toss potato wedges in olive oil and a sprinkle of salt. Roast potato wedges on a baking sheet at 380F until soft and crispy.

  2. Wash lettuce and chop up. Chop up other veggies and lay in rows on top of the lettuce.

  3. Whisk all vinaigrette ingredients together and drizzle over the salad.

  4. Bon appetit!
