Easy Gluten-Free Pancakes

Dairy-Free, Gluten-Free, Soy-Free



2 local farm eggs
1 ripe banana
1/2 tsp vanilla extract
1/4 cup gluten-free oat flour
Pinch of salt
Dash of cinnamon
Coconut oil for the pan


  1. Mash the banana till it's basically a liquid. Add in eggs and stir. Add in everything else and stir till mixed. You can't over mix this recipe.

  2. Heat coconut oil over medium heat, pour a bit less than a 1/4 cup of batter for each pancake. Flip once they start to bubble slightly. These are super easy to flip, they cook right up.

  3. Top with maple syrup (only the real deal! Stay away from fake syrups) or Lakanto syrup, fresh fruit, cinnamon, nut butters, dairy-free yogurt or whatever you like!
