Chocolate Monkey Protein Balls

Ingredients

Makes about 15-18 protein balls
1 cup macadamia nuts, soaked overnight or for at least 4 hours
1/4 + 1 tbsp natural organic peanut butter (you gotta stir this shit up)
2 ripe bananas
1/4 tsp vanilla extract
Dash of cinnamon
2 tbsp raw cacao powder
1/3 to 1/2 cup gluten-free oats
2 tbsp chia seeds
2 tbsp raw cacao nibs for that crunch
**These are not very sweet, use really ripe bananas (banana bread style) or add a bit of a natural sweetener of choice.

Method

  1. Blend all ingredients except chia seeds, cacao nibs and oats in a food processor till smooth.

  2. Stir or use your hands to mix in the chia seeds, cacao nibs and oats.

  3. Chill the mixture in the fridge for about 30 minutes, so it's easy to roll into balls.

  4. Roll into approx. tbsp sized balls.

  5. Keep refrigerated in a container.
