Easy Homemade Granola
Vegan, Gluten-Free, Soy-Free
2 cups gluten-free rolled oats
1/4 cup coconut oil, melted
1/4 cup real maple syrup
1 tsp vanilla extract
1 tsp + of cinnamon ( I tend to add a lot as its a fave)
1/4 cup unsweetened, shredded coconut
- Preheat oven to 350F. Add all ingredients in a bowl and mix. Pour granola onto a baking sheet and spread evenly.
- Bake for 20-23 minutes depending on your oven. Flip granola half way through.*Once you see the edges of the oats on the outside of the pan getting a bit brown, it's done! Burnt granola tastes horrible! I've done it a few times!
- Let the granola cool on the tray, until it's all crispy.
- Serve with coconut kefir yogurt, on top of smoothie bowls or enjoy alone!
