Chocolate Chip, Cashew & Coconut Cookies

Gluten-Free, Dairy-Free, Grain-Free, Soy-Free

Ingredients
Makes about 9-10 cookies

2 local free range, organic eggs
1/3 cup coconut oil, melted
1 tsp vanilla extract
1/4 cup coconut sugar
1/3 cup cashew butter
1/2 cup coconut flour
1/4 tsp baking soda
Pinch of sea salt
1/4 cup dairy-free chocolate chips

Method

  1. Preheat oven to 350F. Line a baking sheet with parchment paper.

  2. Mix the eggs, coconut oil, coconut sugar and vanilla. Once well combined, mix in the cashew butter until smooth.

  3. Add in the dry ingredients. Mix till well incorporated.

  4. Fold in chocolate chips.

  5. Drop spoonfuls of cookie dough on your baking sheet. Squish or press down a bit to ensure they are somewhat round. These won't spread out much, but they will puff up a bit.

  6. Bake for 10-13 minutes depending on your oven. Bake till the cookie bottoms are golden brown.

  7. Transfer to a cookie rack to cool.
